Vermont Tech to Offer New Cheesemaking Class

Randolph — Vermont Technical College will offer a class, Essential Principles and Practices of Cheesemaking, from Oct. 21-25 at its Randolph Center campus.

The new course will cover the principles of cheesemaking, including the chemistry of milk, cheesemaking technologycol

and quality control.

It includes hands-on lessons in making various styles of cheese and a private tour of Neighborly Farms of Vermont in Randolph Center.

The instructors include Marie Chantal Houde, a Canadian master cheesemaker and president of the cheese shop Nouvelle France, and Montserrat Almena-Aliste, a dairy technologist and American Cheese Society Certified Cheese Professional.
